Should I attend a renowned fashion school in NYC or a less famous one with a more "college-like" experience?

Whichever college you are most comfortable going to. If you can't decide, visit the colleges and make your decision based on that. Ideally you can get campus tours, meet with current students, and possibly stay in a dorm to make your decision.
